Tex-Mex Pulled Pork Tacos

Ingredients

• 500g MelCo Food's Pulled Pork
  

For Spice Mix

• 1 tbs cumin powder
  
• 1 tbs ground coriander seeds
  
• 1 tbs mild paprika
  
• 1 tsp dried oregano
  
• 1/2 tsp cayenne pepper powder
  
• 1/2 tsp garlic powder
  

To Serve

• 8 mini soft tortillas
• 8 oak lettuce leaves
• 1/8 red cabbage, shredded
• 1/2 red onion, sliced
  
• 1 lime, cut into 1/8's
  
• 1/2 bunch coriander, roughly chopped
  
• Mozarella cheese

Method

For Spice Mix

1. Combine cumin, coriander, paprika, cayenne, garlic powder. Mix well.
   

For Pulled Pork

1. Place a medium-sized non-stick frying pan on medium heat with a tablespoon of oil. Once heated add in MelCo Food's Pulled Pork and season with spice mix to taste. Mix well and fry for 4-6 minutes, or until golden brown.
   
2. Season with salt and pepper to taste.
   
3. Take off heat and set to the side, covered with aluminium foil to keep warm.
   

To Serve

1. Heat up tortillas on a plate in a microwave for 30 seconds.
   
2. Start compiling your tacos! Oak lettuce, pulled pork, mozarella cheese, red cabbage, garnish with coriander, red onion, and a squeeze of lime. Enjoy!
